  • 1 cup Milk dairy or non-dairy
  • 1/4 cup Molasses or brown sugar
  • 1/2 cup Vegetable Oil can substitute with melted coconut oil or butter
  • 1 1/2 cups All-Purpose Flour gluten-free blend can be used
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon adjust or omit as desired
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter softened, margarine can be used
  • 1 cup Dixie Crystals Extra Fine Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 2 teaspoons Taylor & Colledge Vanilla Bean Paste or pure vanilla extract
  • 2 Large Eggs or substitutes as needed
For the Frosting
  • 1 cup Unsalted Butter softened
  • 4 cups Dixie Crystals Confectioners Powdered Sugar
  • 1/4 cup Heavy Whipping Cream or milk for lighter version
  • 1 cup Marshmallow Creme or Marshmallow Fluff
For the Garnish
  • 1 package Pre-packaged Oatmeal Cream Pies or homemade oatmeal cookies

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine rolled oats, milk, molasses, and vegetable oil. Let sit for 30 minutes.
  2. Preheat your oven to 350°F (175°C) and prepare two cake pans.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In a stand mixer, beat softened butter and sugars until light and fluffy. Add eggs one at a time.
  5. Alternate adding the dry mixture and soaked oat mixture to the creamed butter until combined.
  6. Divide the batter into prepared pans and bake for 30-35 minutes.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. To make frosting, beat butter, then gradually add powdered sugar and cream until smooth. Add vanilla bean paste.
  9. Mix marshmallow fluff with a portion of the frosting for filling.
  10. Assemble the cake by leveling tops, layering with filling, and frosting the exterior.
  11. Garnish with oatmeal cream pies before serving.
