  • 3 cups Cooked Rice or brown rice or cauliflower rice
  • 2 tablespoons Olive Oil or Butter for sautéing
  • 1/4 cup Fresh Parsley chopped
  • 2 Lime Wedges for serving

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil or butter in a large skillet over medium-high heat.
  2. Slice 12 ounces of sausage into thick rounds, then sear for about 3-4 minutes on each side until golden brown.
  3. Add one chopped onion and 1 cup of mixed bell peppers, sauté for 5-6 minutes until translucent.
  4. Add 3 minced garlic cloves and cook for an additional 30 seconds, stirring constantly.
  5. Sprinkle 2 tablespoons of Cajun seasoning over the vegetables and cook for another minute.
  6. Return the sausage to the skillet, combine with the vegetables, then add 3 cups of cooked rice.
  7. Let the mixture simmer on low for 2-3 minutes, then garnish with parsley and serve with lime wedges.
