Method
 

Preparation Steps
  1. Dice 1 medium ripe peach into small cubes and set aside.
  2. In a mixing bowl, combine 1 cup of rolled oats, 1 cup of milk, 1 tablespoon of chia seeds, 2 tablespoons of maple syrup, 0.5 teaspoon of cinnamon, 0.25 teaspoon of vanilla extract, and a pinch of salt. Stir well for 1-2 minutes.
  3. Gently fold the diced peaches into the oat mixture until evenly distributed.
  4. Spoon the mixture into two jars, seal, and place in the refrigerator for at least 6 hours or overnight.
  5. The next morning, stir the oats and add 1-2 tablespoons of milk if desired. Top with additional diced peaches and a sprinkle of cinnamon before serving.
