Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine 2 cups of plain Greek yogurt, ½ cup creamy peanut butter, ¼ cup maple syrup, and 1 teaspoon vanilla extract. Whisk until smooth.
  2. Line an 8x8-inch square baking pan with parchment paper. Dollop half of the yogurt mixture into the pan and spread out.
  3. Insert popsicle sticks into the center of each mound, then use the remaining yogurt mixture to cover.
  4. Scatter ½ cup of roasted and salted peanuts over the tops, gently press them in.
  5. Place the pan in the freezer and let it chill for about 2 hours or until firm.
  6. In a microwave-safe bowl, combine 1 cup of chocolate chips with 1 tablespoon of coconut oil. Microwave until melted.
  7. Dip each bar halfway into the melted chocolate and place them back on the parchment.
  8. Return the bars to the freezer for an additional 30 minutes to set the chocolate coating.
