- In a medium bowl, combine 2 cups of plain Greek yogurt, ½ cup creamy peanut butter, ¼ cup maple syrup, and 1 teaspoon vanilla extract. Whisk until smooth.
- Line an 8x8-inch square baking pan with parchment paper. Dollop half of the yogurt mixture into the pan and spread out.
- Insert popsicle sticks into the center of each mound, then use the remaining yogurt mixture to cover.
- Scatter ½ cup of roasted and salted peanuts over the tops, gently press them in.
- Place the pan in the freezer and let it chill for about 2 hours or until firm.
- In a microwave-safe bowl, combine 1 cup of chocolate chips with 1 tablespoon of coconut oil. Microwave until melted.
- Dip each bar halfway into the melted chocolate and place them back on the parchment.
- Return the bars to the freezer for an additional 30 minutes to set the chocolate coating.
