  • 4 fillets Salmon Skin-side down, can substitute with trout or chicken
For the Glaze
  • 1 cup Pomegranate juice Fresh juice preferred
  • 1/4 cup Fresh orange juice Freshly squeezed is best
  • 2 tablespoons Honey Maple syrup can be used as an alternative
  • 2 cloves Garlic Minced for depth of flavor
  • to taste Salt Essential for seasoning
  • to taste Pepper Essential for seasoning
For Garnishing
  • 1/2 cup Pomegranate seeds Sprinkle over baked salmon

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick spray.
  2. In a medium bowl, whisk together fresh pomegranate juice, orange juice, honey, minced garlic, salt, and pepper until well combined.
  3. Place the salmon fillets skin-side down in the baking dish and pour the glaze over each fillet.
  4. Bake the salmon for 15-20 minutes, checking for doneness by flaking with a fork.
  5. Once baked, let the salmon rest and then sprinkle fresh pomegranate seeds over the fillets.
  6. Serve with any remaining glaze drizzled on top and choice of sides.
