  • 1 cup Granulated Sugar
  • 1/2 cup Butter unsalted
  • 1 large Egg or substitute with flax egg for vegan
  • 2 cups All-Purpose Flour or gluten-free alternative
  • 1 teaspoon Baking Powder ensure it’s fresh
  • 1/2 teaspoon Salt sea salt recommended

  • 1 cup Chocolate Chips or Nuts optional
  • 1 cup White Chocolate Drizzle after cooling

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and granulated sugar together until light and fluffy. Add the pumpkin puree and egg, mixing until combined.
  3. In a separate bowl, whisk together the flour, pumpkin pie spice, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, folding until just combined.
  5. Portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, removing them when the edges are light golden.
  7. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
