Chicken Marinade
  • 1 lb Boneless Chicken Breast or Thighs Substitute with tofu for vegetarian option.
  • 2 Tbsp Shaoxing Wine Dry sherry can be used or omit for non-alcoholic.
  • 1 Tbsp Cornstarch
  • 1 tsp Salt
Sauce
  • 1 cup Chicken Broth Vegetable broth works for vegetarian option.
  • 2 Tbsp Oyster Sauce Use hoisin sauce for vegetarian alternative.
  • 2 Tbsp Soy Sauce Gluten-free soy sauce optional.
  • 1 Tbsp Sugar
  • 1/2 tsp White Pepper Black pepper is a suitable substitute.
  • 1 Tbsp Sesame Oil
Stir-Fry
  • 2 Tbsp Peanut or Vegetable Oil Used for stir-frying.
  • 2 cups Shredded Cabbage Substitute with bok choy.
  • 2 cloves Garlic Minced.
  • 1 Tbsp Ginger Minced, feel free to omit if preferred.
  • 8 oz Fresh Chow Mein Noodles Dried chow mein noodles or spaghetti can be used.
  • 1 cup Carrots Pre-cut coleslaw mix can save time.
  • 1 each Anaheim Pepper Optional, use jalapeño or omit as desired.
  • 1/4 cup Green Onions Sliced, scallions are a great substitute.

Method
 

Cooking Steps
  1. Marinate sliced chicken with Shaoxing wine, cornstarch, and salt for 10 minutes.
  2. Prepare the sauce by whisking chicken broth, Shaoxing wine, oyster sauce, soy sauce, sugar, white pepper, and sesame oil together.
  3. Cook fresh chow mein noodles in boiling water according to package instructions, draining them one minute early to prevent overcooking.
  4. In a skillet, heat oil and sear marinated chicken until golden brown, about 30 to 45 seconds per side, then remove from pan.
  5. Bloom minced ginger and garlic in the skillet until fragrant.
  6. Add shredded cabbage and carrots, stirring for about one minute until they soften but retain crunch.
  7. Combine cooked chicken, vegetables, noodles, and sauce in the skillet, gently tossing for about two minutes.
  8. Stir in sliced green onions and optional Anaheim pepper, then serve immediately.
