Step-by-Step Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add chopped white onion, ½ teaspoon kosher salt, and spices including 1 tablespoon chili powder, 1 teaspoon garlic powder, 1 teaspoon ground cumin, and 1 teaspoon dried oregano along with 2 tablespoons tomato paste. Cook for about 2 minutes or until the onions become translucent and fragrant.
- Add 1 pound of ground turkey to the skillet, using a wooden spoon to break it apart. Stir frequently, cooking for about 5-7 minutes until the turkey is mostly browned, and no longer pink.
- Stir in 1 medium diced sweet potato, 1 can of drained black beans, and 1 cup of chunky salsa into the skillet. Mix thoroughly to ensure the sweet potato cubes are well-covered.
- Cover the skillet with a lid and cook for 12-14 minutes, stirring occasionally, until the sweet potatoes are tender.
- Once the sweet potatoes are tender, add 4 cups of baby spinach to the skillet, stirring until fully wilted, which should take about 2-3 minutes.
- Serve your Ground Turkey & Sweet Potato Taco Skillet topped with your favorite toppings like diced avocado, fresh cilantro, a squeeze of lime juice, or a dollop of sour cream.
