Prepare the Dressing
- In a medium saucepan, combine the fresh orange juice, fresh lemon juice, and honey. Heat the mixture over medium-high heat until it comes to a gentle boil, stirring continuously to dissolve the honey completely, which takes about 2-3 minutes.
- Once boiling, reduce heat to a low simmer and let it cook for about 5 minutes until slightly thickened and aromatic.
- Mix cornstarch with cold water in a small bowl until smooth. Stir the cornstarch mixture into the simmering syrup and continue stirring for another minute until it thickens slightly.
- Remove from heat and allow to cool at room temperature.
Prepare the Fruits
- Wash and prepare the fresh ingredients for your salad: hull and slice strawberries, peel and slice kiwis, and halve red grapes. Drain and rinse mandarin oranges and gently pat them dry.
Combine the Fruits
- In a large mixing bowl, combine all prepared fruits: strawberries, kiwis, grapes, mandarin oranges, raspberries, and blackberries. Gently fold the fruits together.
Dress the Salad
- Pour the cooled dressing generously over the mixed fruits and gently toss to coat.
Serve and Garnish
- Spoon the fruit salad into individual bowls or cups. Garnish with fresh mint leaves.
