Ingredients
  

Dressing

Fruit Salad
  • 1 cup Strawberries Prep: Hull and slice before use.
  • 2 pieces Kiwis Prep: Peel and slice.
  • 1 cup Red Grapes Note: Serve whole or halved.
  • 1 can Mandarin Oranges Prep: Drain well before adding.
  • 1 cup Raspberries
  • 1 cup Blackberries

Method
 

Prepare the Dressing
  1. In a medium saucepan, combine the fresh orange juice, fresh lemon juice, and honey. Heat the mixture over medium-high heat until it comes to a gentle boil, stirring continuously to dissolve the honey completely, which takes about 2-3 minutes.
  2. Once boiling, reduce heat to a low simmer and let it cook for about 5 minutes until slightly thickened and aromatic.
  3. Mix cornstarch with cold water in a small bowl until smooth. Stir the cornstarch mixture into the simmering syrup and continue stirring for another minute until it thickens slightly.
  4. Remove from heat and allow to cool at room temperature.
Prepare the Fruits
  1. Wash and prepare the fresh ingredients for your salad: hull and slice strawberries, peel and slice kiwis, and halve red grapes. Drain and rinse mandarin oranges and gently pat them dry.
Combine the Fruits
  1. In a large mixing bowl, combine all prepared fruits: strawberries, kiwis, grapes, mandarin oranges, raspberries, and blackberries. Gently fold the fruits together.
Dress the Salad
  1. Pour the cooled dressing generously over the mixed fruits and gently toss to coat.
Serve and Garnish
  1. Spoon the fruit salad into individual bowls or cups. Garnish with fresh mint leaves.
