Preparation Steps
- Wash about a 2-inch piece of fresh ginger thoroughly. Slice or grate for infusion.
- In a medium saucepan, combine the sliced ginger with 1.5 cups of water. Bring to a boil and steep for 10-20 minutes.
- Strain the ginger-infused water into a bowl or jug. Stir in honey while warm until dissolved.
- In a large pitcher, combine ginger syrup with 2.5 cups of cold water and fresh lemon juice. Whisk to mix well.
- Chill in the refrigerator for at least 30 minutes. Serve over ice and garnish with lemon slices or mint leaves.
