Ingredients
  

For the Salad
  • 8 ounces Dried Orzo Cook until al dente.
  • 1 cup Cucumbers Diced.
  • 1 cup Cherry Tomatoes Halved.
  • 1 can Chickpeas Drained and rinsed.
  • 1/4 cup Red Onion Finely chopped.
  • 1 cup Feta Cheese Crumble before mixing.
  • 1/4 cup Parsley Chopped.
For the Dressing
  • 1/4 cup Extra-Virgin Olive Oil
  • 1 juice Lemon Freshly squeezed.
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Maple Syrup Optional.
  • 1/2 teaspoon Garlic Powder
  • 1 pinch Dried Oregano
  • to taste Salt
  • to taste Pepper

Method
 

Cooking & Assembling
  1. Bring a pot of salted water to a boil, add orzo, reduce heat, and cook for about 8 minutes until al dente. Drain and drizzle with olive oil.
  2. In a medium bowl, combine olive oil, lemon juice, red wine vinegar, and Dijon mustard. Whisk until emulsified, then add maple syrup, garlic powder, oregano, salt, and pepper.
  3. In a large bowl, mix diced cucumbers, halved cherry tomatoes, drained chickpeas, finely chopped red onion, crumbled feta, and chopped parsley.
  4. Once cooled, fold the orzo into the salad mixture without mashing the ingredients.
  5. Pour the dressing over the salad and toss gently to coat. Adjust seasoning as necessary.
  6. Serve immediately or chill for about 30 minutes before enjoying.
