Step-by-Step Instructions
  1. Wash all ingredients, including kale, apple, cucumber, celery, and parsley, under cold running water.
  2. Remove tough stems from kale and roughly chop into smaller pieces. Core and chop the apple into wedges; peel cucumber if desired.
  3. In a high-speed blender, combine kale, apple, cucumber, celery, peeled lemon, ginger, and optional parsley.
  4. Pour in cold water or coconut water; start blender on low, then increase to high for about 60 seconds or until smooth.
  5. Optional: Strain the mixture using a fine mesh sieve for a smoother texture.
  6. Pour the juice into chilled glasses filled with ice, and garnish with a lemon wheel or parsley sprig.
