For the Sardine Mixture
  • 1 tin Sardines (packed in extra-virgin olive oil) Can be swapped with fresh fish if desired.
  • 2 cloves Garlic (minced) Fresh garlic preferred for best flavor.

  • 2 tablespoons Fresh Parsley (chopped) Feel free to replace with your favorite herbs.

Method
 

Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Once boiling, add your spaghetti or linguine.
  2. While the pasta cooks, open the tin of sardines packed in olive oil, draining and reserving the oil.
  3. In a large skillet, heat a tablespoon of the reserved sardine oil over medium heat. Add minced garlic and sauté for about 1 minute.
  4. Add your fresh breadcrumbs or panko to the skillet, seasoning with salt and pepper. Toast for about 2-4 minutes until golden brown.
  5. In the same skillet, add chopped sweet onion and sauté over medium heat for 5-7 minutes until softened and golden.
  6. Gently fold the prepared sardines into the skillet with the onions, heating through for about 2 minutes.
  7. Once the pasta has cooked to al dente, reserve ½ cup of the cooking water, then drain the pasta thoroughly.
  8. Add the drained pasta directly to the skillet with the sardine mixture. Toss gently to combine.
  9. Pour in a splash of the reserved pasta water as needed to create a creamy consistency.
  10. Plate your delicious sardine pasta, topping with crispy garlic breadcrumbs and garnish with parsley and lemon wedges.
