Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add sliced onion and sauté for about 2-3 minutes until softened.
  2. In a mixing bowl, combine chicken pieces with minced lemongrass, garlic, fish sauce, oyster sauce, light soy sauce, brown sugar, and ground black pepper. Marinate for 15-30 minutes.
  3. Add the marinated chicken and its marinade to the skillet. Stir-fry on medium-high heat for about 8-10 minutes until thoroughly cooked.
  4. Taste the mixture and adjust seasoning as needed with fish sauce or brown sugar.
  5. Plate the Lemongrass Chicken, garnish with sliced red chili, fresh cilantro, and serve with lime wedges.
