Step-by-Step Instructions
  1. In a medium bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, ginger, garlic, cumin, coriander, red pepper flakes, sesame oil, and lime juice until smooth.
  2. Place chicken thighs in a zip-top bag or large bowl, pour marinade over, seal or cover, refrigerate for at least 2 hours or overnight.
  3. Preheat the oven to 400°F (200°C) or prepare the grill to medium-high heat. Remove chicken from marinade and place on baking sheet or grill.
  4. For oven roasting, bake chicken for 35-40 minutes, basting occasionally until golden. For grilling, cook 6-8 minutes per side.
  5. Remove chicken from heat, let rest for a few minutes, serve hot garnished with cilantro and sesame seeds.
