Preparation Steps
- Bring a large pot of salted water to a boil. Add the penne pasta and cook for 10-12 minutes until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning and cook for 4-5 minutes on each side until golden brown. Set aside.
- In the same skillet, add shrimp and sauté for 2-3 minutes until pink and opaque. Set aside with chicken.
- Add andouille sausage to the skillet and cook for 2 minutes. Add bell peppers, onion, and garlic, then sauté for 4 minutes until the vegetables soften.
- Pour in the heavy cream and let simmer for 2-3 minutes. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Return chicken and shrimp to the skillet. Add cooked penne pasta and toss to combine, heating through for 1-2 minutes.
- Garnish with chopped parsley and serve hot.
