Ingredients
  

For the Pasta
  • 8 ounces Penne Pasta or fusilli or rigatoni
For the Protein
  • 1 pound Boneless Skinless Chicken Breast or turkey
  • 1 pound Shrimp or scallops or mixed vegetables
  • 8 ounces Andouille Sausage or chorizo or kielbasa
For the Vegetables
  • 1 cup Bell Peppers any variety
  • 1 medium Red Onion or yellow onion
  • 3 cloves Garlic or 1/8 tsp garlic powder per clove
For the Sauce
  • 1 cup Heavy Cream or half-and-half or non-dairy alternatives
  • 1/2 cup Parmesan Cheese or Pecorino Romano or nutritional yeast
For Seasoning
  • 2 tablespoons Cajun Seasoning to taste
  • 2 tablespoons Olive Oil or butter or canola oil
  • to taste Salt & Pepper
For Garnish
  • 1/4 cup Chopped Parsley or chives

Method
 

Preparation Steps
  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook for 10-12 minutes until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning and cook for 4-5 minutes on each side until golden brown. Set aside.
  3. In the same skillet, add shrimp and sauté for 2-3 minutes until pink and opaque. Set aside with chicken.
  4. Add andouille sausage to the skillet and cook for 2 minutes. Add bell peppers, onion, and garlic, then sauté for 4 minutes until the vegetables soften.
  5. Pour in the heavy cream and let simmer for 2-3 minutes. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  6. Return chicken and shrimp to the skillet. Add cooked penne pasta and toss to combine, heating through for 1-2 minutes.
  7. Garnish with chopped parsley and serve hot.
