  • 1/4 cup Parmesan Cheese grated, optional for a vegan option use nutritional yeast
  • to taste Salt

Method
 

Step-by-Step Instructions
  1. Preheat the grill to medium-high heat, around 400°F (200°C).
  2. Slice the zucchini and yellow squash into 1/8-inch thick ribbons.
  3. In a large mixing bowl, combine the sliced squash with olive oil, lemon juice, salt, and pepper; toss to coat.
  4. Thread the zucchini and yellow squash ribbons onto skewers.
  5. Grill the skewers for approximately 12 minutes, turning occasionally.
  6. Remove from the grill and sprinkle Parmesan cheese over the top while hot.
