For the Toppings
  • 1 cup fresh cilantro leaves Can substitute with parsley.
  • 2 green onions Chopped, green parts only.
For the Creamy Green Sauce
  • 1/2 cup mayonnaise Base for the creamy green sauce.
  • 1/4 cup Greek yogurt Can be substituted with sour cream.
  • 1/2 teaspoon salt Adjust according to taste.

Method
 

Steps
  1. In a blender, combine garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper. Blend until smooth.
  2. Marinate 2 pounds of chicken thighs in the marinade for 8 to 24 hours.
  3. For the creamy green sauce, blend cilantro, green onions, garlic, mayonnaise, Greek yogurt, lime juice, salt, and black pepper until smooth.
  4. Grill the chicken for about 5-6 minutes per side until internal temperature reaches 165°F.
  5. Alternatively, roast the marinated chicken at 500°F for 30 minutes, then cover with foil for an additional 15 minutes.
  6. Let the chicken rest before serving, drizzled with the creamy green sauce.
