- Cook your desired noodles according to the package instructions, usually taking 5-7 minutes. Drain and rinse in cold water, then set aside.
- In a small bowl, combine oyster sauce and soy sauce, stirring until well blended. Set aside.
- Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add shrimp, season with salt and pepper, and stir-fry for about 5 minutes.
- Add more oil if needed. Toss in minced garlic, chopped spring onions, and minced ginger. Sauté for about 1 minute until fragrant.
- Add sliced onion, broccoli florets, and julienned carrots. Stir and cook for about 5 minutes.
- Add prepared noodles and sauce mixture to the pan. Toss gently for about 2-3 minutes until well combined.
- Return cooked shrimp to the pan, sprinkle sesame seeds on top. Toss for 1 more minute, garnish with spring onions, and serve hot.
