In a bowl, mix breadcrumbs with garlic powder, onion powder, and a sprinkle of red pepper flakes. Dredge the pesto side into the breadcrumb mixture, pressing lightly to adhere.
  2. Assemble the Rolls: Position provolone cheese slices at one end of the seasoned steak. Roll tightly from the cheese end, securing the braciole with kitchen twine or toothpicks.
  3. Sear the Rolls: Heat a cast iron skillet over medium-high heat. Add olive oil and place beef rolls into the skillet. Sear each side for 30 seconds until golden-brown to seal in juices.
