Method
 

Preparation Steps
  1. Brown the beef in a skillet over medium heat for 5-7 minutes until browned. Drain fat and transfer to slow cooker.
  2. Sauté diced onion, minced garlic, and chopped bell pepper in the same skillet for 3-4 minutes until softened. Transfer to slow cooker.
  3. Add drained kidney beans, crushed tomatoes, chili powder, cumin, and smoked paprika to slow cooker. Stir to combine.
  4. Cover slow cooker and set to low for 6-8 hours or high for 3-4 hours, stirring occasionally.
  5. Adjust seasoning with salt and pepper before serving. Ladle into bowls and add optional toppings.
