Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the lean ground beef over medium heat for 7-10 minutes until browned.
  3. Stir in chunky salsa and half of the shredded cheese, heating for 2-3 minutes.
  4. Spoon the beef mixture into the center of each tortilla, roll them up, and place seam-side down in a greased baking dish.
  5. Pour the red enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  6. Cover with aluminum foil and bake for 25 minutes, uncovering for an additional 10 minutes.
  7. Allow to cool for about 5 minutes before serving.
