  • 2 Caramelised Onions Use red and brown onions
  • 1/2 cup Panko Breadcrumbs Acts as a binder
  • 1 tsp Dried Thyme Use fresh if available

  • 1/2 tsp Black Pepper Omit for milder taste
  • 1 Egg Acts as binder
For the Pastry
  • 3-4 sheets Puff Pastry Thaw before use
For the Caramelisation
  • 1 tbsp Olive Oil Can also use vegetable oil
  • 20 g Unsalted Butter Salted butter can be used if adjusted
  • 1 tbsp Brown Sugar Coconut sugar is a substitute
  • 1 tbsp Balsamic Vinegar Red wine vinegar is an alternative
For the Finish
  • 1 Egg (for wash) Plant-based milk for vegan option

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350-375°F). Line a baking tray with parchment paper.
  2. Peel and slice the red and brown onions into rings.
  3. In a large saucepan, heat olive oil over high heat. Add onions and cook for about 10 minutes, then lower heat and add butter, vinegar, and sugar, cooking for an additional 10-15 minutes until caramelized.
  4. Transfer the caramelized onions to a food processor and blitz until finely chopped. Combine with pork mince, breadcrumbs, thyme, salt, pepper, and egg in a bowl, mixing well.
  5. Roll out thawed puff pastry and cut into rectangles. Place sausage filling in the center of each and roll pastry around it.
  6. Seal the rolls with egg wash on the edges and cut into individual rolls of about 5-6 cm in length.
  7. Place the rolls on the baking tray, brush tops with leftover egg wash, and bake for 25-30 minutes until golden brown.
  8. Transfer baked rolls to a cooling rack and serve warm with dipping sauces.
