- Preheat your oven to 180°C (350-375°F). Line a baking tray with parchment paper.
- Peel and slice the red and brown onions into rings.
- In a large saucepan, heat olive oil over high heat. Add onions and cook for about 10 minutes, then lower heat and add butter, vinegar, and sugar, cooking for an additional 10-15 minutes until caramelized.
- Transfer the caramelized onions to a food processor and blitz until finely chopped. Combine with pork mince, breadcrumbs, thyme, salt, pepper, and egg in a bowl, mixing well.
- Roll out thawed puff pastry and cut into rectangles. Place sausage filling in the center of each and roll pastry around it.
- Seal the rolls with egg wash on the edges and cut into individual rolls of about 5-6 cm in length.
- Place the rolls on the baking tray, brush tops with leftover egg wash, and bake for 25-30 minutes until golden brown.
- Transfer baked rolls to a cooling rack and serve warm with dipping sauces.
