- Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing or lining it.
- Wilt the spinach by microwaving for 1-2 minutes or sautéing until just wilted, then chop and drain excess moisture.
- In a bowl, whisk together flour, baking powder, salt, and onion powder until combined.
- In another bowl, beat eggs, milk, and vegetable oil until smooth.
- Fold the wet ingredients into the dry mixture until just combined.
- Gently fold in shredded cheese and spinach until evenly distributed.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full and bake for 18-20 minutes.
- Allow to cool in the tin for 5 minutes before transferring to a wire rack.
