Ingredients

For the Chicken Marinade
  • 1.5 pounds Chicken Breasts Cut into 1-inch strips for even cooking and tenderness.
  • 3 tablespoons Soy Sauce Use tamari instead for a gluten-free option.
  • 2 tablespoons Brown Sugar Balances the savory and adds a hint of sweetness.
  • 2 cloves Garlic Minced; enhances the depth of flavor.
  • 1 teaspoon Ground Turmeric Gives the chicken a warm, earthy flavor and vibrant color.
  • 1 teaspoon Ground Cumin Adds a rich, nutty taste that complements the marinade.
  • 1 tablespoon Lime Juice Fresh juice brightens and balances flavors beautifully.
For the Peanut Sauce
  • 3/4 cup Creamy Peanut Butter This is the heart of the peanut sauce, creating a creamy base.
  • 1/3 cup Water Adjusts the sauce's consistency; add more for a thinner dip.
  • 1 teaspoon Sriracha Sauce Adds a kick; adjust to your heat preference, or omit for a milder sauce.
  • Additional Soy Sauce Optional; a splash can deepen the flavor; adjust to taste.
  • Garlic Optional; extra minced garlic can enhance the flavor; adjust based on preference.
Garnishes
  • Cilantro For garnish; adds freshness and a pop of color.
  • Lime Wedges For garnish; squeeze over the finished dish to enhance flavors.

Equipment

  • Air Fryer
  • Medium Bowl
  • whisk
  • Saucepan

Method

Step-by-Step Instructions
  1. In a medium bowl, combine soy sauce, brown sugar, minced garlic, turmeric, cumin, and fresh lime juice. Whisk the mixture well until the sugar dissolves completely.
  2. Add the sliced chicken breasts into the marinade and toss gently to ensure every piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour—preferably overnight.
  3. While the chicken marinates, preheat your air fryer to 360°F (182°C). If using bamboo skewers, soak them in water during this time.
  4. Once marinated, thread the chicken pieces onto the skewers in a single layer, allowing space between each piece for even cooking.
  5. Place the skewers in the air fryer basket, making sure not to overcrowd them. Cook for 4-5 minutes on one side until golden, then flip and cook for an additional 4-5 minutes.
  6. While the chicken cooks, heat a small saucepan over medium heat. Whisk together peanut butter, water, soy sauce, lime juice, brown sugar, sriracha, and minced garlic until the mixture is smooth and creamy.
  7. Once the Chicken Satay is cooked, remove it from the air fryer and let it rest briefly. Serve with peanut sauce and garnish with cilantro and lime wedges.

Notes

Allow the chicken to marinate overnight for deeper flavor absorption and tenderness. Preheat your air fryer for an even cook and achieve that appealing char.
