Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil or cooking spray.
  2. In a large bowl, crack the eggs and whisk until frothy and well combined, about 1-2 minutes.
  3. Add cottage cheese to the egg mixture and stir until smooth and fully incorporated.
  4. Fold in shredded cheddar cheese gently until evenly distributed.
  5. Add chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder to the bowl. Stir well.
  6. In a small bowl, dissolve baking powder in 1 tablespoon water and mix into the egg mixture.
  7. Pour in the olive oil and mix until the batter is smooth.
  8. Spoon the mixture into the prepared muffin tin, filling each cup nearly to the top.
  9. Bake for 18-20 minutes, or until the tops are set and golden brown.
  10. Once baked, cool for 5 minutes before loosening the edges to remove from the tin.
