Step-by-Step Instructions for Cowboy Butter Steak Bites
  1. Heat the skillet by placing a medium skillet over medium-high heat, adding a drizzle of extra virgin olive oil until it shimmers.
  2. Sear the steak bites in a single layer for 1½ to 2 minutes until a rich brown crust forms.
  3. Flip each steak bite gently using tongs and cook for another 1 to 2 minutes. Aim for 130–135°F for medium rare.
  4. Reduce heat to medium and add half of the cowboy butter, tossing the bites to coat them.
  5. Melt the remaining cowboy butter in the microwave for serving.
  6. Plate the steak bites on a serving platter, optionally garnish with fresh herbs, and serve immediately.
