Method
 

Step-by-Step Instructions for Cranberry Chicken
  1. In a medium bowl, combine fresh cranberries with brown sugar and 1 tablespoon of white wine vinegar. Toss until evenly coated and set aside.
  2. Pat the chicken dry and rub minced garlic, chopped rosemary, paprika, salt, and pepper under the skin.
  3. Mix olive oil, celery, onion, remaining vinegar, and lemon juice in a large dish. Add seasoned chicken, coat well, and marinate for 15 minutes.
  4. Preheat oven to 425°F (220°C).
  5. In a skillet, sear chicken skin-side down in olive oil for 5 minutes, flip, and brown for another 3 minutes.
  6. Top seared chicken with sugared cranberries and pour chicken broth around it. Bake for 35-40 minutes until internal temperature reaches 165°F (75°C).
  7. Remove from oven, let rest, garnish with rosemary, and serve hot.
