Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized bowl, whisk together the eggs, milk, kosher salt, and black pepper until combined and frothy.
  3. Melt the butter in a non-stick skillet over medium-high heat, pour in the egg mixture, and cook until set but still soft, about 3-4 minutes.
  4. Slice the croissants in half horizontally and place the bottoms cut-side up on a parchment-lined baking sheet.
  5. Spread a thin layer of mustard on each croissant bottom, layer with cheese, ham, and another slice of cheese.
  6. If using bacon, layer it on top of the ham. Place the croissant tops on gently.
