- Preheat your oven to 350°F (175°C).
- In a medium-sized bowl, whisk together the eggs, milk, kosher salt, and black pepper until combined and frothy.
- Melt the butter in a non-stick skillet over medium-high heat, pour in the egg mixture, and cook until set but still soft, about 3-4 minutes.
- Slice the croissants in half horizontally and place the bottoms cut-side up on a parchment-lined baking sheet.
- Spread a thin layer of mustard on each croissant bottom, layer with cheese, ham, and another slice of cheese.
- If using bacon, layer it on top of the ham. Place the croissant tops on gently.
- Bake in the preheated oven for 10 minutes until the cheese is melted and bubbly.
- Remove from the oven, spoon fluffy scrambled eggs onto each sandwich, and replace the croissant tops.
