Ingredients
  

Filling
  • 1 tablespoon Vegetable Oil Any neutral oil like canola or sunflower.
  • 1 large Onion Finely diced.
  • 2 cloves Garlic Minced.
  • 1 pound Ground Beef Can substitute with ground turkey or chicken.
  • 2 tablespoons Curry Powder Adjust to taste.
  • 1 teaspoon Turmeric Powder Optional.
  • 1 teaspoon Cumin Powder Substitute with coriander if desired.
  • 1 teaspoon Sugar Omit if a less sweet profile is preferred.
  • 1 teaspoon Black Pepper Freshly ground is preferred.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 cup Beef Broth Use low-sodium broth.
  • 1 tablespoon Cornstarch Mix well to avoid lumps.
Pastry
  • 1 package Puff Pastry Homemade rough puff is recommended.
  • 1 egg Egg For wash, water can be added.

Method
 

Prepare Filling
  1. Heat vegetable oil in a skillet over medium-high heat. Add diced onion and minced garlic, sauté for 4-5 minutes until translucent.
  2. Add ground beef, breaking it up as it cooks for 6-8 minutes until browned.
  3. Sprinkle in curry powder, turmeric, cumin, sugar, black pepper, and salt. Cook for 2 more minutes while stirring.
  4. Mix cornstarch with beef broth to create a slurry. Stir this into the beef mixture and simmer for 3-4 minutes until thickened. Remove from heat and let cool.
Prepare Pastry
  1. Roll out puff pastry on a floured surface, cut into 4-5 inch squares.
  2. Spoon approximately 3 tablespoons of cooled filling into the center of each square and fold over to create triangles.
  3. Seal edges by pressing together or crimping with a fork, then refrigerate for 15-20 minutes.
  4. Preheat oven to 400°F (200°C). Brush each puff with egg wash and bake for 15-18 minutes until golden.
  5. Let cool on a wire rack for 10-15 minutes before serving.
