Prepare Filling
- Heat vegetable oil in a skillet over medium-high heat. Add diced onion and minced garlic, sauté for 4-5 minutes until translucent.
- Add ground beef, breaking it up as it cooks for 6-8 minutes until browned.
- Sprinkle in curry powder, turmeric, cumin, sugar, black pepper, and salt. Cook for 2 more minutes while stirring.
- Mix cornstarch with beef broth to create a slurry. Stir this into the beef mixture and simmer for 3-4 minutes until thickened. Remove from heat and let cool.
Prepare Pastry
- Roll out puff pastry on a floured surface, cut into 4-5 inch squares.
- Spoon approximately 3 tablespoons of cooled filling into the center of each square and fold over to create triangles.
- Seal edges by pressing together or crimping with a fork, then refrigerate for 15-20 minutes.
- Preheat oven to 400°F (200°C). Brush each puff with egg wash and bake for 15-18 minutes until golden.
- Let cool on a wire rack for 10-15 minutes before serving.
