Preparation Steps
- Season the Chicken: Pat chicken thighs dry and season both sides with salt and pepper.
- Sear the Chicken: Heat oil in skillet, sear chicken skin-side down for 5-7 minutes until golden, then flip and cook 3-4 minutes. Transfer to plate.
- Caramelize the Onions: Sauté sliced onions in the same skillet for about 5 minutes until soft. Add minced garlic and cook for 30 seconds.
- Add Apples and Herbs: Stir in apple slices, thyme, and rosemary for 2-3 minutes until apples soften.
- Pour in Cider and Broth: Add apple cider and chicken broth, scrape the bottom of the pan. Simmer for about 2 minutes.
- Simmer the Chicken: Return chicken back to the skillet skin-side up and cover. Simmer for 25-30 minutes until cooked through.
- Finish the Sauce: Remove chicken, stir in Dijon mustard and heavy cream. Simmer for 2-3 minutes until thickened.
- Reintroduce the Chicken: Return chicken to the pan and warm in sauce for 2 minutes before serving.
