- Heat 2 tablespoons of avocado oil in a large, 12-inch skillet over medium-high heat for 1-2 minutes.
- Add 1 pound of cubed Yukon gold potatoes and sauté for 5-6 minutes until golden brown and tender.
- Push the potatoes to one side, add 1 pound of ground beef, 1/2 cup onion, and 1 diced red bell pepper. Cook for 7-8 minutes.
- Sprinkle in kosher salt and black pepper to taste; cook for an additional minute or two.
- Stir in 4 ounces of diced green chiles, 2 1/2 teaspoons of chili powder, 1 teaspoon of ground cumin, and 1/2 teaspoon of smoked paprika. Cook for 3-4 minutes.
- Add the sautéed potatoes back and 1/4 cup of chopped cilantro. Cook for 6-8 minutes over medium heat.
- Sprinkle 1/2 cup of shredded cheese over the mixture, cover, and cook for 2-3 minutes until melted.
- Remove from heat and optionally garnish with extra cilantro. Serve hot.
