- Heat a large skillet over medium heat and add 1 tablespoon of avocado oil.
- Once the skillet is heated, add 1 pound of ground turkey, cooking for 5-7 minutes until browned.
- Stir in 3 cloves of minced garlic and 1 tablespoon of freshly grated ginger, cooking for 1-2 minutes.
- Add 1 cup of grated carrot, stirring for an additional 3-4 minutes until softened.
- Drizzle in 1/4 cup of coconut aminos, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, and juice of 1 lime.
- Turn off the heat and stir in 1/4 cup of chopped green onion.
- Spoon approximately 1/4 cup of turkey mixture into large lettuce leaves, topping with additional green onions and lime juice.
