Method
 

Step-by-Step Instructions
  1. Prepare the shrimp by cleaning and deveining, leaving shells on. Rinse and pat dry.
  2. In a medium bowl, mix potato/corn starch, paprika, onion powder, garlic powder, salt, and pepper. Coat each shrimp with the mixture.
  3. Heat enough neutral oil in a large skillet over medium heat until shimmering. Test with a pinch of coating; it should sizzle.
  4. Fry shrimp for 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  5. Lower heat, add butter to the skillet, and melt gently. Combine with remaining oil.
  6. Add minced garlic to the melted butter and sauté until fragrant, 3-4 minutes.
  7. Toss fried shrimp in garlic butter and serve immediately with rice and lemon wedges.
