Preparation Steps
  1. Let the chuck roast rest for 15 minutes at room temperature. Season with kosher salt.
  2. Sear the beef in a large skillet over medium-high heat for about 10 minutes until golden brown.
  3. Deglaze the skillet with beef broth, scraping the bottom to combine flavors, then pour over the beef in the slow cooker.
  4. Combine garlic powder, onion powder, Italian seasoning, sugar, black pepper, and thyme in a bowl, then sprinkle over the beef.
  5. Add pepperoncini and giardiniera, then pour any remaining beef broth over the mixture.
  6. Cover and cook in the slow cooker on LOW for 8 to 10 hours until beef is tender and shreds easily.
  7. Shred the beef using two forks and let it simmer in its juices for an additional 30 minutes.
  8. Toast hoagie buns, fill them with beef, top with provolone cheese, extra pepperoncini, and giardiniera, then enjoy.
