Step-by-Step Instructions
  1. In a medium bowl, combine miso paste, brown sugar, rice vinegar, minced garlic, and sesame oil. Stir until well blended.
  2. Pat the cod loins dry and place in a shallow dish. Pour the marinade over the cod, ensuring it's evenly coated. Cover and refrigerate for about 1 hour.
  3. Heat a non-stick frying pan over medium heat. Add vegetable oil and allow it to shimmer for 2 minutes.
  4. Carefully place the marinated cod in the hot pan, skin-side down if applicable, and cover the pan. Cook for 3 to 4 minutes.
  5. Remove the lid, flip the cod, increase heat to high, and cook for another minute while basting with remaining marinade.
  6. Transfer the cooked cod to a serving platter and garnish with sliced spring onions.
