  • 4 pieces Boneless, Skinless Chicken Breasts or thighs for juiciness
For the Sauce
  • 1 cup Pepperoncini Peppers sliced
  • 1 medium Onion yellow or white
  • 2-3 cloves Garlic minced
  • 1 teaspoon Dried Oregano or Italian seasoning
  • 1 teaspoon Dried Basil or fresh
  • 1 cup Chicken Broth or bouillon
For the Creamy Finish
  • 1/2 cup Heavy Cream or half and half
  • 1/4 cup Parmesan Cheese grated, or dairy-free alternative

Method
 

Step-by-Step Instructions
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat cooking oil in a large skillet over medium heat.
  3. Add the chicken to the pan and sear for about 5-7 minutes until golden brown.
  4. Flip the chicken and cook for another 5-7 minutes until cooked through (internal temperature of 165°F).
  5. Transfer the chicken to a plate and cover with foil to keep warm.
  6. In the same skillet, add chopped onion and minced garlic, sauté for about 3-5 minutes until translucent.
  7. Stir in sliced pepperoncini, chicken broth, oregano, and basil, and bring to a simmer.
  8. Let it bubble for 2-3 minutes to thicken.
  9. Return the cooked chicken to the skillet and spoon the sauce over it, simmering together for 10-12 minutes.
  10. Stir in heavy cream and Parmesan cheese until melted and smooth, cook an additional 2-3 minutes.
  11. Serve hot over rice or mashed potatoes.
