Step-by-Step Instructions
  1. In a mixing bowl, whisk together hoisin sauce, grated ginger, minced garlic, and Dijon mustard until well combined. Rub the marinade generously over the trimmed beef tenderloin and refrigerate for at least 15 minutes.
  2. Preheat your broiler on high and arrange fresh pineapple slices in a single layer on a broiler pan. Broil for about 5 minutes, flip, and broil for another 5 minutes until caramelized.
  3. Remove the marinated beef tenderloin, season with salt and pepper, and broil it for approximately 20 minutes or until cooked to your desired doneness (135°F for medium-rare).
  4. Prepare the glaze by combining hoisin sauce, pineapple juice, remaining grated ginger, soy sauce, and additional salt and pepper in a saucepan over medium heat. Simmer for 5-7 minutes until slightly thickened.
  5. Once cooked, let the beef rest for about 5 minutes. Slice into medallions, serve with caramelized pineapple, and drizzle with the ginger glaze.
