- Take a small portion of the pork filling and place it in the center of each mini tortilla. Press down to flatten slightly, ensuring filling stays within edges.
- Heat about 2 tablespoons of oil in a non-stick skillet over medium heat. Cook filled tortillas for 2-3 minutes until golden brown, then flip and fry another 2-3 minutes.
- Slice cucumbers and place in a bowl. Add a splash of vinegar and salt, tossing to coat. Let marinate for 10-15 minutes.
- Remove tacos from skillet. Top each taco with pickled cucumbers and drizzle with dumpling dipping sauce before serving.
