Ingredients
  

Filling
  • 1 lb Ground Pork Can substitute with ground chicken or turkey.
  • 1 tsp Garlic Powder
  • 1 tsp Ginger
Tacos
  • 10 pieces Mini Tortillas Choose corn or flour.
Pickled Cucumbers
  • 2 cups Cucumbers Can substitute with radishes.
Dipping Sauce
  • 1/4 cup Dumpling Dipping Sauce Mix soy sauce, vinegar, and sesame oil if homemade isn’t available.

Method
 

Preparation
  1. In a mixing bowl, combine ground pork with garlic powder, ginger, and your choice of spices. Mix thoroughly for about 5 minutes.
  2. Take a small portion of the pork filling and place it in the center of each mini tortilla. Press down to flatten slightly, ensuring filling stays within edges.
  3. Heat about 2 tablespoons of oil in a non-stick skillet over medium heat. Cook filled tortillas for 2-3 minutes until golden brown, then flip and fry another 2-3 minutes.
  4. Slice cucumbers and place in a bowl. Add a splash of vinegar and salt, tossing to coat. Let marinate for 10-15 minutes.
  5. Remove tacos from skillet. Top each taco with pickled cucumbers and drizzle with dumpling dipping sauce before serving.
