  • 12 pieces Egg Roll Wrappers Keep sealed until ready to use.

Method
 

Prepare Filling
  1. In a large mixing bowl, combine the cooked shredded chicken, corn, rinsed black beans, chopped spinach, diced red bell pepper, and diced jalapeno.
  2. Stir well until all ingredients are evenly distributed.
Add Seasonings
  1. Sprinkle cumin, chili powder, salt, and black pepper over the mixture.
  2. Mix thoroughly to ensure every ingredient is coated with the seasoning.
Incorporate Cheese
  1. Gently fold in the shredded Monterey Jack cheese into the filling mixture.
Wrap Egg Rolls
  1. Lay an egg roll wrapper on a clean surface with one corner facing you.
  2. Place 2-3 tablespoons of the filling at the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides, and roll tightly.
  4. Seal the top corner with a little water or egg wash.
Cooking Method - Frying
  1. Heat oil in a skillet over medium-high heat to 350°F.
  2. Fry wrapped egg rolls in batches for about 2-3 minutes per side until golden brown.
Cooking Method - Baking
  1. Preheat your oven to 425°F.
  2. Lightly brush the egg rolls with oil, then place them seam-side down on a baking sheet.
  3. Bake for 15-20 minutes, flipping halfway through.
