  • 1 medium red onion chopped
  • 3 cloves garlic minced
  • 1 medium red bell pepper chopped
  • 2 carrots diced
For the Protein and Beans
  • 1 pound ground turkey choose 85% to 99% lean
  • 1 15-ounce can kidney beans drained and rinsed
  • 1 15-ounce can black beans drained and rinsed
For the Flavor
  • 2 tablespoons homemade chili seasoning mix
  • 1 15-ounce can diced tomatoes with juices
  • 2 tablespoons tomato paste
  • 1 cup chicken stock or vegetable stock

Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large sauté pan over medium-low heat. Add one chopped red onion and two diced carrots, cooking for about 5 minutes until the onions are translucent.
  2. Stir in 3 minced garlic cloves and one chopped red bell pepper, sautéing for an additional 2-3 minutes until fragrant.
  3. Increase heat to medium-high and add 1 pound of ground turkey. Cook for about 8-10 minutes until fully browned.
  4. Stir in 2 tablespoons of homemade chili seasoning mix, coating the turkey and vegetables evenly.
  5. Add in one 15-ounce can of kidney beans, one can of black beans, one can of diced tomatoes, 2 tablespoons of tomato paste, and 1 cup of chicken stock. Mix thoroughly.
  6. Bring to a low boil, reduce heat to medium-low, and let it simmer uncovered for 20-25 minutes.
  7. Once thickened, remove from heat and ladle into bowls. Serve hot with optional toppings.
