- Heat 2 tablespoons of olive oil in a large sauté pan over medium-low heat. Add one chopped red onion and two diced carrots, cooking for about 5 minutes until the onions are translucent.
- Stir in 3 minced garlic cloves and one chopped red bell pepper, sautéing for an additional 2-3 minutes until fragrant.
- Increase heat to medium-high and add 1 pound of ground turkey. Cook for about 8-10 minutes until fully browned.
- Stir in 2 tablespoons of homemade chili seasoning mix, coating the turkey and vegetables evenly.
- Add in one 15-ounce can of kidney beans, one can of black beans, one can of diced tomatoes, 2 tablespoons of tomato paste, and 1 cup of chicken stock. Mix thoroughly.
- Bring to a low boil, reduce heat to medium-low, and let it simmer uncovered for 20-25 minutes.
- Once thickened, remove from heat and ladle into bowls. Serve hot with optional toppings.
