Ingredients
  

For the Sauce
  • 2 tablespoons olive oil substitute with any neutral oil if desired
  • 1 medium red onion can use yellow or white onion
  • 1 medium red bell pepper green bell pepper can be an alternative
  • 1 medium yellow bell pepper can replace with more red pepper
  • 4 cloves garlic substitute with garlic powder (1/2 teaspoon)
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon smoked paprika regular paprika can be substituted
  • 1 teaspoon cumin coriander could be an alternative
  • 1 28 oz can diced tomatoes fresh tomatoes can be used if preferred
  • 1 tablespoon maple syrup can be switched for agave syrup or sugar
For the Tofu
  • 1 14 oz package firm tofu extra-firm tofu can enhance texture
  • 1 optional vegan feta cheese omit if not desired
  • 1/4 cup chopped cilantro can use parsley instead

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil shimmers, add in the diced red onion and sauté for about 10 minutes until it softens and turns golden.
  2. Introduce the diced red and yellow bell peppers to the skillet, cooking for an additional 3-5 minutes until they start to soften.
  3. Add the minced garlic along with the salt, smoked paprika, and cumin to the skillet. Cook for 30-60 seconds, stirring continuously.
  4. Quickly pour in the diced tomatoes and drizzle in the maple syrup, stirring to combine. Allow the mixture to simmer for 5-7 minutes.
  5. While the sauce is simmering, drain and press the tofu. Crumble the tofu into bite-sized pieces and season with salt and pepper, then nestle the tofu into the bubbling sauce.
  6. Check the seasoning and adjust to your taste. Sprinkle vegan feta cheese and chopped cilantro over the top, and if desired, add chili flakes for heat. Serve hot.
