Ingredients
  

For the Meatloaf
  • 1 tablespoon Olive Oil Can substitute with any neutral oil
  • 1 medium Red Bell Pepper Replace with green bell pepper or omit if desired
  • 1 medium Red Onion Use yellow onion as substitute
  • 2 cloves Garlic Fresh garlic is preferred
  • 2 pounds Ground Beef Can substitute with ground turkey or chicken
  • 1 cup Italian Style Breadcrumbs Gluten-free breadcrumbs can also be used
  • 1/2 cup Grated Parmesan Cheese Substitute with nutritional yeast for a dairy-free option
  • 2 Eggs Replace with flaxseed meal mixed with water for a vegan substitute
  • 1 tablespoon Tomato Paste Can be replaced with ketchup or omitted
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/4 cup Fresh Parsley Dried herbs can be used if fresh is not available
  • 4 slices Deli Ham Substitute with turkey or omit for a lighter version
  • 1/4 cup Fresh Basil Leaves Spinach can be used as an alternative
  • 1 cup Shredded Mozzarella Cheese Other melting cheeses such as provolone or cheddar may also be used
For Serving
  • 1 cup Marinara Sauce Any preferred pasta sauce can be used
  • 2 cups Pasta or Zucchini Noodles Can be swapped with polenta or rice

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet over medium heat, drizzle olive oil and sauté chopped red onion, diced red bell pepper, and minced garlic for about 5-7 minutes until softened.
  3. In a large mixing bowl, combine the sautéed vegetables with ground beef, Italian-style breadcrumbs, grated Parmesan cheese, eggs, tomato paste, salt, and black pepper. Mix thoroughly.
  4. On parchment paper, shape the meat mixture into an 8"x15" rectangle.
  5. Layer deli ham, fresh basil, and mozzarella cheese along the center of the meat rectangle.
  6. Roll the meatloaf tightly away from you, sealing the edges well, and place seam-side down on a baking sheet.
  7. Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). Tent with foil halfway through if needed.
  8. Let the meatloaf rest for about 10 minutes before slicing and serve over pasta or zucchini noodles with marinara sauce.

Notes

For best results, tightly roll the meatloaf and allow it to rest after baking. Meal prep can be done in advance for convenience.
