Preparation Steps
- Preheat your oven to 350°F (175°C).
- In a medium skillet over medium heat, drizzle olive oil and sauté chopped red onion, diced red bell pepper, and minced garlic for about 5-7 minutes until softened.
- In a large mixing bowl, combine the sautéed vegetables with ground beef, Italian-style breadcrumbs, grated Parmesan cheese, eggs, tomato paste, salt, and black pepper. Mix thoroughly.
- On parchment paper, shape the meat mixture into an 8"x15" rectangle.
- Layer deli ham, fresh basil, and mozzarella cheese along the center of the meat rectangle.
- Roll the meatloaf tightly away from you, sealing the edges well, and place seam-side down on a baking sheet.
- Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). Tent with foil halfway through if needed.
- Let the meatloaf rest for about 10 minutes before slicing and serve over pasta or zucchini noodles with marinara sauce.
