Ingredients
  

For the Gumbo
  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 1 lb Andouille sausage, sliced Do not substitute unless necessary.
  • 2 tbsp file powder Can substitute with cornstarch if out.
  • 4 cups chicken or vegetable broth Homemade preferred.
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cayenne pepper Adjust for desired heat.
  • 1 tsp thyme
For the Vegetables
  • 1 medium onion, diced
  • 1 medium bell pepper, diced Any color works, green is traditional.
  • 2 stalks celery, diced
  • 1 cup okra or zucchini, optional Classic addition for texture.
For Serving
  • 3 cups brown rice White rice can be used for a lighter option.
  • 2 tbsp fresh parsley, chopped For garnish.

Method
 

Cooking Instructions
  1. Chop vegetables: dice onion, bell pepper, and celery to create a mirepoix mixture. Gather spices.
  2. In a large pot, heat oil over medium heat, add sausage and cook until browned, about 5-7 minutes.
  3. Add onions, bell peppers, and celery to the pot with sausage drippings, sauté for 5-7 minutes until soft.
  4. Return sausage to pot, pour in broth, add shrimp and spices, simmer for about 10 minutes.
  5. Stir in file powder, continue simmering on low for another 10 minutes until thickened.
  6. Serve gumbo over brown rice and garnish with parsley.
