Step-by-Step Instructions
  1. In a large bowl, combine the chicken thighs with coconut milk, olive oil, onion, minced garlic, grated ginger, chili paste, ground cumin, paprika, salt, and black pepper. Mix well until the chicken is fully coated in the marinade. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for optimal flavor.
  2. Preheat your oven to 375°F (190°C). Grease your baking dish with a little olive oil to prevent sticking.
  3. Transfer the marinated chicken and all the marinade into the prepared baking dish. Bake in the preheated oven for 35-40 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  4. Once baked, let the chicken rest for 5 minutes. Squeeze fresh lime juice over the dish and garnish with chopped cilantro. Serve warm, over rice or with crusty bread.
