- In a large bowl, combine the chicken thighs with coconut milk, olive oil, onion, minced garlic, grated ginger, chili paste, ground cumin, paprika, salt, and black pepper. Mix well until the chicken is fully coated in the marinade. Cover and let it marinate in the refrigerator for at least 1 hour, or overnight for optimal flavor.
- Preheat your oven to 375°F (190°C). Grease your baking dish with a little olive oil to prevent sticking.
