Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchini in half lengthwise and scoop out the insides, leaving about half an inch of flesh.
  3. In a skillet, heat a drizzle of olive oil and cook the ground chicken for 6-8 minutes, then stir in buffalo wing sauce and ranch seasoning.
  4. Spoon the buffalo chicken mixture into each hollowed zucchini half and top with shredded mozzarella cheese.
  5. Cover with foil and bake for 30 minutes, then remove foil and bake for another 5 minutes.
  6. Remove from oven, let cool for a minute, then serve with optional buffalo sauce or ranch dressing.
