- Preheat your oven to 400°F (200°C).
- Slice the zucchini in half lengthwise and scoop out the insides, leaving about half an inch of flesh.
- In a skillet, heat a drizzle of olive oil and cook the ground chicken for 6-8 minutes, then stir in buffalo wing sauce and ranch seasoning.
- Spoon the buffalo chicken mixture into each hollowed zucchini half and top with shredded mozzarella cheese.
- Cover with foil and bake for 30 minutes, then remove foil and bake for another 5 minutes.
- Remove from oven, let cool for a minute, then serve with optional buffalo sauce or ranch dressing.
