Preparation Steps
- Prepare Sauce: Boil water, add Roma tomatoes and Guajillo chiles, simmer for 10 minutes, then cool.
- Blend Sauce: Transfer to blender with optional chipotle, blend until smooth, adjusting thickness with water.
- Season Shrimp: Marinate raw shrimp with lime or lemon juice, salt, and black pepper.
- Sauté Shrimp: In skillet, heat butter and olive oil, sauté shrimp for 1 minute per side, then set aside.
- Sauté Onion & Garlic: In same skillet, sauté onion for 3-4 minutes, add garlic and cook 30 seconds.
- Combine and Cook: Pour blended sauce in skillet, simmer for 4-5 minutes, return shrimp and cook 2 minutes.
- Serve & Garnish: Season sauce, garnish with cilantro or parsley, serve with tortillas or rice.
