Ingredients
  

For the Sauce
  • 4 medium Roma Tomatoes fresh, for bright, tangy flavor
  • 3 dried Guajillo Chiles stemmed and seeded
  • 2 dried Chile de Arbol adjust for heat preference
  • 1 optional Chipotle Pepper in Adobo Sauce
For the Shrimp
  • 1.5 lbs Raw Shrimp large size (31/35 count)
  • 2 tbsp Lime or Lemon Juice for seasoning
  • 1 tsp Salt
  • 1 tsp Ground Black Pepper
For Cooking
  • 1 tbsp Butter can be substituted with olive oil
  • 2 tbsp Olive Oil
  • ½ medium Onion brown, yellow, or white
  • 2 cloves Garlic minced
For Garnish and Serving
  • ¼ cup Chopped Cilantro or Parsley optional
  • 1 lime Lime or Lemon Wedges for serving
  • 1 cup Sour Cream optional
  • 4 pieces Corn Tortillas for serving

Method
 

Preparation Steps
  1. Prepare Sauce: Boil water, add Roma tomatoes and Guajillo chiles, simmer for 10 minutes, then cool.
  2. Blend Sauce: Transfer to blender with optional chipotle, blend until smooth, adjusting thickness with water.
  3. Season Shrimp: Marinate raw shrimp with lime or lemon juice, salt, and black pepper.
  4. Sauté Shrimp: In skillet, heat butter and olive oil, sauté shrimp for 1 minute per side, then set aside.
  5. Sauté Onion & Garlic: In same skillet, sauté onion for 3-4 minutes, add garlic and cook 30 seconds.
  6. Combine and Cook: Pour blended sauce in skillet, simmer for 4-5 minutes, return shrimp and cook 2 minutes.
  7. Serve & Garnish: Season sauce, garnish with cilantro or parsley, serve with tortillas or rice.
