Ingredients
  

For the Noodles
  • 200 grams Frozen Udon Noodles Feel free to use fresh noodles for a different texture.
For the Sauce
  • 2 tablespoons Butter Substitute with olive oil for a lighter option.
  • 2 cloves Minced Garlic Fresh garlic is best.
  • 1 medium Chopped Shallot Can swap with onions if needed.
  • 3 tablespoons Gochujang The star of the show.
  • 1 cup Heavy Cream Use coconut milk for a dairy-free version.
  • ½ cup Reserved Noodle Water Key for adjusting sauce consistency.
  • 1 tablespoon Soy Sauce Opt for tamari to keep it gluten-free.
  • 1 teaspoon Gochugaru Adjust to taste or leave it out.
For Garnishing
  • 2 tablespoons Grated Parmesan Cheese Nutritional yeast is a vegan-friendly alternative.
  • 2 tablespoons Chopped Green Onion Regular onions or chives can be used.
  • 1 large Egg Yolk Optional.

Method
 

Cooking Instructions
  1. Boil a pot of water and cook the frozen udon noodles according to package instructions, about 5-7 minutes. Reserve ½ cup of the starchy noodle water, drain the noodles, and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add 2 minced garlic cloves and 1 chopped shallot, sauté for about 2-3 minutes until fragrant and translucent.
  3. Stir in 3 tablespoons of gochujang, mixing with the sautéed garlic and shallots. Cook for about 30 seconds.
  4. Gradually pour in 1 cup of heavy cream and the reserved noodle water. Add 1 tablespoon of soy sauce and a pinch of gochugaru. Bring the sauce to a gentle simmer for about 2-3 minutes.
  5. Add the cooked udon noodles to the simmering sauce, tossing gently to coat. Heat through for about 1-2 minutes.
  6. Transfer to serving bowls and top with grated Parmesan cheese, chopped green onions, and egg yolk if desired. Serve hot.
