- If using frozen corn, thaw and drain until dry; if fresh, cut kernels off cob and pat dry.
- In a large mixing bowl, combine corn, flour, chili powder, smoked paprika, garlic powder, cumin, baking powder, and a pinch of salt.
- Add egg and lime zest to the dry mixture and stir until the batter is sticky and thick.
- Heat oil in a skillet over medium-high heat. Test by dropping a small spoonful of batter into the pan; it should sizzle.
- Shape batter into bite-sized pieces and fry in batches for 2-3 minutes on each side until golden brown.
- Transfer fried corn bites to a plate lined with paper towels to drain excess oil and squeeze fresh lime juice over them.
