  • 1 cup Flour or gluten-free flour
  • 1 teaspoon Chili Powder increase for more spice
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Garlic Powder optional: use fresh minced garlic
  • 1 teaspoon Cumin or coriander if unavailable
  • 1 teaspoon Baking Powder
  • 1 large Egg or flaxseed egg for vegan option
  • 2 tablespoons Lime Juice & Zest
  • 1 teaspoon Salt adjust to taste
For Frying
  • 2 cups Oil (for frying) vegetable or canola oil

Method
 

Preparation Steps
  1. If using frozen corn, thaw and drain until dry; if fresh, cut kernels off cob and pat dry.
  2. In a large mixing bowl, combine corn, flour, chili powder, smoked paprika, garlic powder, cumin, baking powder, and a pinch of salt.
  3. Add egg and lime zest to the dry mixture and stir until the batter is sticky and thick.
  4. Heat oil in a skillet over medium-high heat. Test by dropping a small spoonful of batter into the pan; it should sizzle.
  5. Shape batter into bite-sized pieces and fry in batches for 2-3 minutes on each side until golden brown.
  6. Transfer fried corn bites to a plate lined with paper towels to drain excess oil and squeeze fresh lime juice over them.
  7. Serve warm on their own or with salsa, guacamole, or sour cream.
