Step-by-Step Instructions
  1. Soak the Dried Shrimp: In a small bowl, soak the dried shrimp in warm water for about 2 minutes and then drain.
  2. Prepare the Dressing: Whisk together fish sauce, fresh lime juice, and palm sugar until dissolved. Add chopped Thai chillies and sliced shallots.
  3. Julienne the Green Mango: Peel the green mango and julienne it into thin strips.
  4. Combine the Salad Ingredients: In a mixing bowl, combine the julienned mango, fresh cilantro, Thai basil (or mint), and half of the roasted peanuts.
  5. Dress the Salad: Pour the dressing over the mango and herb mixture, and toss gently to coat.
  6. Serve and Garnish: Transfer to a platter, garnish with remaining peanuts and rehydrated shrimp if using, and serve immediately.
